Boo-yah! This curd was delicious and easy to make (seriously). This curd is so pretty and it doesn't take that long. Just make sure you use organic lemons because it requires a lot of zest and no one wants chemical-filled, radioactive curd.

There was one moment of terror when I added the lemon juice to the butter mixture and I figured I once again screwed up an easy recipe. The pretty creamy mixture turned into a curdled icky mess and my mom came over, while on the phone, and yelled, "Ariel no. It's curdled, you messed it up!" Back when I used to live at home I was notorious for forgetting to add eggs to baking recipes so there's reason for her to doubt me. Luckily, Kate assures the reader that this is normal, thank god because my mother sure didn't ha!

 I would totally take a bath in this curd, but most people probably spread it on crackers or croissants. I even added it to some yogurt and it was FAB.

P.S.- Here is the proof of my curd-yogurt. I threw in some raspberries and chia seeds for a little texture and because I feel like a bird when I eat chia seeds.
