Loaded Vegetarian Sweet Potatoes

Hi Eaters! I've got another cooking video for you and this time there is a BABY sweet potato. If you're looking for an easy and filling weeknight recipe you'll want to try out these loaded taters! Enjoy the video, the recipe is posted below.

Loaded Vegetarian Sweet Potatoes

Ingredients (Serves 1 person)

  • 1 sweet potato
  • About 1/2 cup chopped spinach
  • About 1/4 cup diced tomatoes 
  • Half of an avocado
  • About 1/4 cup of rinsed black beans
  • 1-2 tablespoons of milk
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • Red peper flakes 
  • 1/4 cup plain greek yogurt 
  • Several sprigs of cilantro


1. Pre-heat the oven to 375 degrees.

2. Prick the sweet potato using a fork and microwave on each side for 4 minutes, or until the potato is soft.

3. While the sweet potato cools, chop the spinach, dice the tomatoes, cube the avocado, and pluck the leaves of the cilantro.

4. Cut the sweet potato in half and carefully scoop out the contents into a bowl, while keeping the skins in tact (we will use them later). Mash the sweet potato and carefully mix in the beans, spinach, salt, red pepper, pepper, and garlic powder. Slowly add milk until the mixture is creamy, but not liquid. 

5. Scoop the mixture back into the skins and bake for 15 minutes. 

6. Take the sweet potato out from the oven and top with tomatoes, avocado, yogurt, and cilantro.

7. Dig in you hungry fool!

Studies show that sweet potato babies who are caressed at a young age are more delicious.
